I did a water change on my 29 gallon display tank and some of my crypts melted!  I didn't do any bigger than normal of a water changes, so I'm not sure why they melted.  Will they grow back?

How big of a water change did you do?  You may want to consider doing 2 smaller water changes a week, rather than 1 large one.  Crypts melt when their conditions change, so the tank conditions maybe got a little worse this week than normal, so the water change made a bigger impact than normal.  For example, you may have overfed a bit this week so the water fouled quicker.  In any case, they will grow back, just keep the tank stable and you shouldn't have any issues with them.
